Ingredients

2 tablespoons olive oil

1 onion, diced

4 cloves garlic, minced

3 carrots, peeled and halved

3 celery stalks, halved

1/2 teaspoon black pepper

1/4 teaspoon sea salt

6 cups Pacific Foods® Organic Low Sodium Chicken Broth

3-5 fresh thyme stems

1/3 cup wild rice, uncooked

3 cups shredded cooked turkey

3 tablespoons lemon juice
Directions

Add olive oil to a large pot over medium heat.

Add in all the vegetables (onion, garlic, carrots, and celery) and sauté for 5 minutes. Season with pepper and sea salt.

Add chicken broth and fresh thyme. Bring to a simmer and add wild rice and shredded turkey.

Cover, lid ajar, reduce heat to maintain a low-simmer, and cook for 20 minutes.

Add in lemon juice. Remove thyme stems from soup.
