Blueberry Lemon Overnight Oats

We love overnight oats, and when you learn to make these overnight oats, you’ll love them, too. These easy overnight oats take only 5 minutes to assemble, and this Blueberry Lemon Overnight Oats recipe is a pretty and delicious version. V8 Pomegranate Blueberry adds flavor and a pretty purple color while lemon zest brings a citrus pop. Chia seeds bump up the fiber, making this a good-for-you breakfast that you can customize by topping with your favorite fresh fruit. We like to add blueberries, but strawberries or sliced banana are great, too – or all three! Blueberry Lemon Overnight Oats are a grab-and-go breakfast that you’ll feel great about.

  • 1 1/3 cups uncooked old-fashioned oats

  • 1 cup V8® Fruit & Vegetable Blends Pomegranate Blueberry Juice

  • 1 container (5.3 ounces) vanilla plant-based yogurt

  • ½ teaspoon grated lemon zest

  • 1 teaspoon chia seeds


  1. Combine the oats, V8®, yogurt, lemon zest, and chia seeds in a bowl. Cover and refrigerate overnight or for up to 3 days.

  2. Stir before serving and top with fresh blueberries, if desired.
