Huevos Rancheros

What a great idea for breakfast or brunch! Everyone loves this combination of fried eggs, refried beans, and salsa...especially when topped with guacamole and sour cream.

Total Time: 10 Minutes

Serves: 4 people 

Prep Time: 5 Minutes



  • 4 tostada shells, warmed

  • 2/3 cup refried beans, heated

  • 2 tablespoons butter

  • 4 eggs

  • 1/4 cup Pace® Chunky Salsa

  • 1/4 cup sour cream

  • 1/4 cup guacamole


  1. Divide the tostadas among 4 serving plates. Spread the beans on the tostadas.

  2. Heat the butter in a 10-inch skillet over medium heat. Add the eggs and cook sunny-side up. Top the tostadas with the eggs, salsa, sour cream, and guacamole.
