Huevos Rancheros
What a great idea for breakfast or brunch! Everyone loves this combination of fried eggs, refried beans, and salsa...especially when topped with guacamole and sour cream.

Ingredients

4 tostada shells, warmed

2/3 cup refried beans, heated

2 tablespoons butter

4 eggs

1/4 cup Pace® Chunky Salsa

1/4 cup sour cream

1/4 cup guacamole
Directions

Divide the tostadas among 4 serving plates. Spread the beans on the tostadas.

Heat the butter in a 10-inch skillet over medium heat. Add the eggs and cook sunny-side up. Top the tostadas with the eggs, salsa, sour cream, and guacamole.
